Our olives are carefully harvested by hand using battery-powered harvesters, ensuring a minimal carbon footprint. The processing of our olives is done without the use of heat, and we rely on nature to recycle water and nutrients back into the soil. Our olives are Ice Pressed on the same day of harvesting to maintain near flawless acidity.
