The 17th generation of the Giusti family continues the tradition of creating exceptional balsamic vinegar using a time-honored process. They carefully select quality grapes, usually Lambrusco and Trebbiano varieties from Modena and Reggio Emilia in Italy, for their delicate concentration of sugars and acidity. The grapes are then pressed, and the juice is boiled down to a thick, sweet syrup that ages in a wooden cask with the “Mother” vinegar.

Giuseppe Giusti's collection of 600 casks, dating back to the 1600s, is where they create the unmistakable aroma of their balsamics. The casks provide an intensity of wood essences and aromas, and the older the cask, the more complex the vinegar.

Their gourmet balsamic vinegar, made from the must of cooked sundried grapes and aged wine vinegar, undergoes a strict process that has been perfected over time. Aged to perfection in special barrels handed down for generations of the Giusti family, the vinegar takes on the complex flavors of the casks. It brings notes of plum jam, red fruit, honey, and vanilla, and is recommended by Stanley Tucci of "Searching for Italy."
